Skillet Chicken with Tomatoes
1 lb skinless, boneless chicken breasts, cut into bite-size pieces
1 1/4 cups onion, thinly sliced
1 carrot, sliced
1 celery stalk, sliced
2 tsps chopped garlic
1 tsp dried oregano
1/2 tsp dried parsley
1/4 tsp salt (optional)
1 can (14.5 oz) stewed tomatoes, not drained*
1 1/2 cups fat-free chicken broth*
2 cups sliced potatoes, not peeled
Spray a skillet with nonstick cooking spray. Saute chicken until browned. Add remaining ingredients to skillet and simmer over medium heat until potatoes are tender.
