African Peanut Soup
1 cup creamy peanut butter
1 tablespoon vegetable oil
1 onion, diced
1 celery, diced
1 sweet red pepper, diced
2 garlic cloves, minced
1/4 teaspoon chili powder
1 (14 1/2 ounce) can diced tomatoes
2 (14 1/4 ounce) cans chicken stock
1 cup cooked brown rice
1 cup finely chopped cooked chicken
Heat the oil in a large saucepan over medium heat. Heat the onion, celery and red pepper.
3saute, stirring often. Stir in the garlic and chili powder. Saute 1 minute longer. Add the tomatoes with their liquid, stock and peanut butter to the sauceoan. Bring to a gentle simmer.
Stir in the rice and chicken.
